I love experimenting with new recipes in the kitchen, and it's so amazing what a person can come up with. Food doesn't have to be unhealthy or boring, just takes a bit of imagination and creativity! All you need is a few healthy ingredients to substitute the unhealthy and you can make some pretty delicious things.
 
Here are a few things I came up with this weekend. 

Zucchini Boat Enchiladas
Preheat oven to 425F
4 zucchinis, cut in half length wise
1 package lean ground chicken or turkey
1/2 a small onion, chopped
1 jalapeno, chopped
1 bell pepper, chopped
1 cup salsa
1 cup shredded cheddar cheese
1/2 cup tomato sauce
 
Hollow out zucchinis and save meat from one zucchini and chop. Chop all veggies and place in a preheated and oiled frying pan. Add meat and stir around until meat is cooked through. Add salsa and mix through. Pour tomato sauce evenly in a baking dish and place zucchinis on top. Add topping evenly through the zucchinis (you may have some topping left over). Spread cheese evenly on top. Cover the dish with tin foil and place in oven. Bake 25-30 minutes and serve immediately.

Healthy Sugar Free Cookies
Preheat oven to 350F 
1/2 cup unsweetened apple sauce
3/4 cup egg whites
1 egg
1/4 cup milk of choice
2 tbsp. coconut flour
1/3 cup oats
1 tbsp. coconut oil
stevia
cinnamon
1 tsp vanilla
1/2 cup chocolate chips
 
Blend everything together except chocolate chips in a magic bullet or blender. Pour chocolate chips in after batter is well blended.
Line a baking sheet with tin foil and spray with non-stick spray. Spoon cookie sized batter on baking sheet and bake for 15 minutes.
 
Healthy food is so easy to make. I challenge you to take your favourite recipe and change it up into a healthy and amazing dish!
