5 crockpot meals to make this week

As the weather cools down and routines ramp back up, it’s the perfect time to lug the crockpot out of storage! Invest a few minutes in your morning and be rewarded with a hot, delicious, ready-to-go dinner as soon as you get home. You’ll love how easy it makes weeknights, and you’ll love taking leftovers for lunch too.

Roast Chicken
Make the juiciest, most tender roast chicken you’ve ever had in the crockpot! Follow this recipe and simply put your whole chicken in the crockpot with some seasoning and maybe some potatoes, carrots, or other root veggies. It makes its own gravy in the bottom of the pot, and it’s ready to serve with a bread roll and a simple salad. If you’re feeling really ambitious, you can use the chicken bones to make stock in your crockpot overnight! Then you can have delicious crockpot chicken soup for your next meal.
 


Pulled Pork
Pulled pork is such a versatile and easy dinner option. Try this recipe if you love pork, and try this one if you’re a vegan or vegetarian. Once your pork (or jackfruit if you’re going vegetarian) has become fall-apart tender in the crockpot and totally slathered in sauce, you can make sandwiches, nachos, or tacos! The options are almost endless.
 


Veggie Curry
Curries are hearty, warming, and perfect for fall weather. This vegetarian curry is packed full healthy, nutrient-dense ingredients like sweet potatoes, chickpeas, and turmeric. It may be vegetarian, but you won’t be missing any meat and you’ll love the flavourful spices! Serve with a piece of pita bread or rice for a simple and complete meal.
 


Pot Roast
You don’t need a Sunday for an excuse to have a pot roast. Try this recipe and turn any weeknight into a special occasion. Use a cheaper cut of beef (like a beef chuck roast) and you’ll be amazed how far it goes. Serve with some easy mashed potatoes and a Caesar salad and put any leftovers on a bun for lunch!


Bolognese
A big Bolognese sauce on top of spaghetti is a great dinner choice any night of the week. Use this recipe for some of the best Bolognese you’ve ever had, and make an extra big batch so you can freeze some for future meals. It doesn’t get much easier than that! If you’re vegan or vegetarian, you can substitute veggie “ground round” or lentils for the beef. It’s a simple recipe, and so delicious it's a Canadian classic. Boil up some noodles and dinner is served!
