There are a few reasons we visit restaurants.  Sometimes it's simply to satisfy hunger.  Sometimes it's to experience pleasing or exciting flavours.  But a growing number of people are motivated by health reasons and looking for the best possible fuel to put into their bodies. The owners of a soon to open Kelowna eatery are building their business model around that last reason.

"Eating healthy can come in multiple ways," said Shane Scott. "Our menu includes a paleo section, a vegan section, vegetarian, keto, pro-athletic, body-building and weight loss."  But whichever diet attracts you, Scott says there are some basic principles of healthy food preparation that they will stick to. "We don't deep fry anything. We bake, steam, grill.  And we use coconut oil and olive oil."
